Grandmother Albertina’s Christmas cake

Torta di Natale della nonna Albertina

In Bologna, it was the cake of Christmas holidays. It end of the meal, cut into small diamond shapes.

Difficulty: Medium

Ingredients: 250 g of ricotta cheese, 75 g of sugar, 75 g of almonds, 2 whole eggs, 3 egg yolks, vanilla extract, red candied cherries to garnish (optional). Serves 6.

Preparation: Peel the almonds and chop them very finely, then mix them with the egg white and sieve them. Also sieve the ricotta cheese and mix it with the almonds, the sugar and, at last, with the separately beaten eggs. Grease a rectangular pan with butter and dust it with flour, then pour in the compound until it is half a finger high. Cook in a pre-heated oven at 150° and cover it with a buttered oil-paper sheet, since the beauty of this cake is that it is white-cooked.

Notes: Before putting it in the oven, garnish the cake with the candied cherries.
