Cold Tender Loin

Maiale rifreddoCold Tender Loin

Difficulty: Medium

Ingredients: 1 kg of tender loin, 3 glasses of dry white wine, salt, pepper, water, 40g of aromatic herbs (sage, rosemary, laurels), mayonnaise, 60g of extravergin olive oil, 300g of red radicchio. (for 4 persons)

Preparation: Put the meat and wine into a hot pan together with aromatic herbs, salt, pepper, oil and half a glass of water and let it cook at moderate heat for approximately 1 hour, adding more wine if needed. As soon as the meat is cooked, put it aside to let it cool down (best to prepare the meat a day before). Cut the meat into thin slices and serve it with the mayonnaise sauce with the red radicchio.
