Stuffed Zucchini

Stuffed ZucchiniDifficulty: Medium

Ingredients: 1 kg of zucchini, 1 carrot, 1 onion, 1 celery stalk, 300 g of ground pork, 30 g of ground mortadella, 40 g of grated parmigiano reggiano, 1 egg, salt, pepper, 1 glass of milk, 1 bottle of tomato sauce, butter and oil. Serves 6.

Preparation: boil the peeled and washed zucchini very quickly, in boiling salt water, then remove the pulp with the appropriate tool (levatorsoli). For the filling, mix the meat, mortadella, the cut up zucchini pulp, parmesan, egg, salt and pepper and stuff the zucchini. With the leftover filling, make little meatballs. Fry the carrot, onion and celery (diced) in oil and butter, add the zucchini and let them cook, turning them delicately with a wooden spoon. Add the tomato sauce, milk, meatballs and cook them until done, adding salt and pepper as necessary.
