Carnival Rice "frittelle"

Here is a traditional recipe well known around Ravenna but also throughout Romagna.  In the past, due to the scarcity of food, nothing got thrown away.  In Romagna, rice was often cooked with milk and what was leftover was used to make these great “frittelline”, created to add some joy to poor people's Carnival parties.

Difficulty: easy

Ingredients: rice (200 gr), milk, flour (a spoonful), an egg, a pinch of salt, a drop of dry Marsala  or grappa, sugar, lard or peanut oil.

Preparation: cook the rice in milk sweetened to taste until it is the same consistency as risotto.  Add all the other ingredients and mix well.  Put spoonfuls of the mixture into a pan with boiling lard (or oil) and turn the “frittelle” over until they are golden brown.  Drain them well, and pat them down with a paper towel, then cover them with powdered sugar.  Serve hot.
