Chestnut Pie

Ingredients: 300 g of sugar, 300 g of butter, 450 g of type “0” flour, grated orange rind, 4 eggs, 600 g of chestnuts, 150 g of raisins, 2 glasses of milk, salt, cinnamon

: mix 150 g of sugar with the butter, stirring thoroughly, then add two eggs.  Slowly mix in the flour, without overworking it so that it does not become too elastic.  Put the dough in the refrigerator.  Separately, soak the raisins in warm water.  Shell the chestnuts and cook them in two glasses of milk with a pinch of salt.  When they are done, put them through a strainer and then add 150 g of sugar, 2 eggs, a pinch of cinnamon and the raisins, mixing well.  Roll out the dough and put it in a buttered and floured cake or pie pan.  Pour the filling into the crust and make a lattice crust on top.  Bake in the oven for about 50 minutes at a medium to high heat.
