Baked Anchovies

AnchoviesAnchovies and sardines together constitute one of the most characteristic and abundant products fished in our sea and together with mackerel they are the main catches of deep sea fishing. Here is a tasty and very easy recipe.

Difficulty: Easy

Ingredients: 1 kg. anchovies, 1 cup of oil, 2 cloves of garlic, 3 spoonfuls of breadcrumbs, lemon slices without the peel, parsley, salt and pepper. Serves 4 people.

Preparation: clean and take the head off the anchovies, and place them in layers in a greased baking pan. Cover each layer of anchovies with lemon slices and chopped garlic, then drizzle a little oil and add a dusting of parsley and breadcrumbs. Continue this process making layers until you have used all the ingredients, adding a dusting of parsley last. Bake at 180° C until the top becomes golden brown.
