Fried like times gone by

Fried fish is a true delicacy, full of flavour and very enticing. In order to get it golden brown and crunchy, the fish should be cooked in plenty of very hot olive oil at varying lengths of time depending on the fish. Here is a Romagna coastal recipe with some simple suggestions; it is very easy to do.

Difficulty: Easy

Ingredients: for 4 people: 8 shrimp, 8 king prawns, 2 zucchini, 1 kg. of fresh small calamari, 8 razor clams.

Preparation: cover the crustaceans with flour and put them into a pan with very hot olive oil. When the frying is complete, take them out and drain off the oil, then cover the calamari and zucchini with flour, place them in the pan with very hot olive oil, and, when the frying is done, take them out and drain off the oil. Place everything on a plate covered with paper towels and let it dry and then add large grain salt and freshly ground pepper.
