Rabbit (or chicken) “alla cacciatora”

Ingredients for 4 servings: 4 spoonfuls of extra-virgin olive oil, half an onion, 2 cloves of garlic, a sprig of rosemary, 1 rabbit (or chicken) cut into pieces, 2 red, ripe tomatoes diced, 1 glass of dry white wine.

Preparation: in a pot with oil, brown the chopped onion and whole garlic cloves, then remove them from the pot.  Put the rabbit or the chicken in the pot and when the meat is browned, put the onion and garlic back in along with the tomatoes and rosemary, and then add salt and pepper to taste.  Boil it over medium heat and then add half a glass of wine.  When the sauce thickens, dinner is ready.
