Steak with herbs

Ingredients: 2 slices of Romagna sirloin of about 1 kg, 8 spoonfuls of Colline di Romagna extra virgin olive oil, 2 Romagna scallions, aromatic herbs as you like (rosemary, sage, thyme, bay leaves), salt and pepper. Serves 4.

Preparation: wash and dry the aromatic herbs and dice them up. Slice the scallion up very thin. Put everything in a little casserole dish and add the oil. Put the casserole into another pot with boiling water and leave it like this for a half hour: in this way the oil will become very aromatized, while keeping its own flavor. Take the meat out of the refrigerator an hour before cooking it, cut away the fat and cook it on very high heat for 2 minutes on each side, then add abundant salt and pepper and put it for five minutes in a hot, but switched off, oven. At the last minute, cut the steak into thin strips, and distribute them evenly but overlapping on a cold plate. Cover it with the oil and serve.
