Funghi_Olio.jpgPreserving provisions for the long winter ahead has been a human necessity linked to survival for centuries, but with the passing of time, more hedonistic ways have gotten the better of these old traditions.

And it is so also for mushrooms, which are abundant in autumn, and which if conserved well bring back the pleasure of their tastiness during winter, which is really quite miserly.

This traditional recipe from Bagno di Romagna, in the Romagna Apennines on the border with Tuscany, includes mushrooms canned in oil which can be served with boiled meat.

Ingredients: small mushrooms, vinegar, white wine, olive oil, garlic, cloves, ground black pepper.

Preparation: clean and wash the mushrooms. Boil them for about 10 minutes in vinegar and white wine. Drain them and spread them on a cloth for 10-12 hours or until they are perfectly dry. Put them in a glass jar and cover them with oil, add the garlic, the cloves and the pepper.
