Garisenda Fry

Difficulty: easy

Ingredients: 200 g of Bologna mortadella, 100 g of soft parmigiano reggiano cheese, 1 small white truffle, 3 eggs, 20 slices of sandwich bread, 600 g of mixed seasonal vegetables or salad, 1 liter of oil for frying, cherry tomatoes for decoration, bread crumbs to taste, milk to taste, extra-virgin olive oil, salt, vinegar. Serves 10 people.

Preparation: Remove the crust from the sandwich bread and cut each slice into four parts.  Put a piece of mortadella, a slice of truffle, and a slice of parmigiano on each of the four parts of bread.  Cover it with another fourth of bread, and press the bread together to close the filling inside.  Do the same until you have used all the mortadella, truffle, parmigiano and bread.  Beat the eggs lightly in a bowl adding a bit of salt and in another bowl put the milk.  Holding the stuffed pieces of bread firmly between your fingers, dip them quickly in the milk, also on the sides, then in the egg, and finally in the breadcrumbs.  Deep fry them in very hot oil and serve them with the mixed vegetables or a side salad.
