Fried Borgotaro Porcini Mushrooms

Fungo di Borgotaro JPGThe Borgotaro porcini mushroom has been well known and widely appreciated since the 1800s, when many mountaineers were forced to emigrate to American or England and exported this product with them; it is featured in many recipes.

Difficulty: Easy

Ingredients: 600 g porcini mushrooms, 2 eggs, milk, breadcrumbs, grated parmesan, extra virgin olive oil, salt. Serves 4.

Preparation: clean the mushrooms, scrape them with a knifepoint to remove the dirt and any impurities and then rub them with damp paper towels. Beat the egg, salted, in a little milk. Dip the mushrooms, cut into big pieces, into the egg mixture, then into a mixture of the grated parmesan and breadcrumbs, and then fry them, a few at a time, in a lot of oil, until they are golden brown. Serve them hot.
